Cupping provides an evaluation and analysis of coffee flavor, while pour-over coffee actually applies this knowledge when brewing. They complement each other and allow us to better understand and appreciate the flavor characteristics of coffee when we taste it.

Use the new SCA standard CVA (Coffee Value Assessment) form for cupping scoring
Combine theory and practice to comprehensively improve coffee knowledge and skills
Small class teaching, to ensure that each person uses a set of brewing tools
Use of Japanese boutique coffee beans and professional equipment
In addition to trying different flavors of coffee, but also the actual experience of hand coffee

The use of flavor and flavor characteristics
Learn how to identify different flavors of coffee
Explore coffee flavors from different origins and processing methods
Master the water temperature of hand flushing, the proportion of bean volume, the characteristics and application of different hand flushing methods.
Understanding the variables and adjustment methods in the coffee extraction process
Practice hand punching and cup testing techniques to develop sensitivity to coffee flavors
